Galette des Rois
Set aside 2 sheets of puff pastry to come to room temperature.
Preheat oven to 425 degrees.
Almond cream filling
2 cups almond meal
1 cup powdered sugar
4 egg whites – reserve yolks for brushing top before baking
10 tablespoons soft butter3 teaspoons vanilla
Mix these ingredients thoroughly. Divide in half. Place on plastic wrap and press down to form two 6 inch discs. Refrigerate for 1 hour.
Place 1 of the puff pastry circles on the parchment lined baking sheet. Add the cooled filling to the center of the pastry. Gently spread to within 1 inch of the edge. Place second sheet over the top. Use a bit of water to edge so that the 2 adhere when crimped.
With sharp knife score with design of choice. Do NOT cut through. Use the egg yolk wash to brush over the pastry.
Place in oven for 15 minutes. Remove and dust lightly with powdered sugar. Return to oven for 10 t0 12 minutes. It should be golden brown. Let it cool for about 30 minutes.
Serve as a dessert or with morning coffee.
Use the other portion of almond meal when you are ready for another tasty treat.
